Ingredients:
4 boneless, skinless chicken breasts
1/2 cup shredded cheddar cheese
1/4 cup shredded Parmesan cheese
1 teaspoon paprika
1 teaspoon Italian seasoning
2 cups chopped cooked broccoli florets
1 tablespoon olive oil
1/2 minced red or green bell pepper
2 minced garlic cloves
1 teaspoon salt
1/2 teaspoon black pepper
Instructions:
Cut a pocket in each chicken breast, being careful not to cut all the way through.
Season the chicken breasts on both sides with salt, pepper, paprika, and Italian seasoning.
In a bowl, combine the chopped cooked broccoli florets, minced bell pepper, cheddar cheese, Parmesan cheese, minced garlic, and additional salt and black pepper to taste.
Stuff each chicken breast with the broccoli cheese mixture, pressing the edges to seal if needed.
Heat olive oil in a large skillet over medium-high heat on the stove.
Sear both sides of the stuffed chicken breasts in the hot oil until they are golden brown.
Preheat your oven to 400 degrees F .
Transfer the seared chicken breasts onto a baking sheet.
Bake the chicken in the preheated oven for about 20 minutes or until the chicken is fully cooked through.
When the chicken is done, remove it from the oven and let it to rest for a little before serving.
If needed, use toothpicks to secure the filling inside the chicken breasts while baking. Remember to remove them before serving.
