Bread and Butter Pudding Recipe

Ingredients (Serving 8):

8 slices of bread
1/3 cup raisins
2 teaspoons cinnamon
1 1/2 cups milk
1/4 cup heavy whipping cream
2 large eggs
1/4 cup of powdered sugar + more for icing

2 tablespoons butter, softened

Instructions:

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
Cut the crust off the bread slices. Butter one side of each slice and then cut them in half diagonally to form triangles.
Grease a 9×9-inch baking dish and arrange a layer of bread slices, buttered side up, in the dish.
Sprinkle half of the raisins and half of the cinnamon over the layer of bread.
Add another layer of bread on top of the first layer and then sprinkle the remaining raisins and cinnamon over it.
In a saucepan, warm the milk and heavy whipping cream over medium heat. Do not let it boil.
Whisk the eggs and granulated sugar together well in a another basin.
Slowly pour a little of the warmed milk mixture into the bowl with the egg mixture while whisking continuously. This will temper the eggs.
Once the egg mixture has been tempered, pour it back into the saucepan with the remaining milk mixture, whisking to combine.
Remove the saucepan from the heat and pour the custard mixture over the bread in the baking dish. Allow it to sit for 30 minutes to let the bread soak up the custard.
Sprinkle some granulated sugar over the top of the pudding.
Place the baking dish in the preheated oven and bake for about 30 minutes or until the pudding is golden brown and cooked through.

Before serving, take it out of the oven and allow it to cool somewhat.
