Boston Cream Cupcakes Recipe

Ingredients:

For the Cupcakes:

1 2/3 cups all-purpose flour
1 cup granulated sugar
1/4 tsp baking soda
1 tsp baking powder
3/4 cup unsalted butter, at room temperature
3 large egg whites
2 tsp pure vanilla extract
1/2 cup sour cream
1/2 cup whole milk

For the Filling:

1 cup heavy cream
2 large egg yolks
3 tbsp granulated sugar
1 tbsp cornstarch
1 tsp pure vanilla extract

For the Chocolate Ganache:

1/2 cup heavy cream
Six ounces of chopped semi-sweet chocolate (for a smoother ganache)

Directions:

Preheat your oven to 350°F (175°C). In a large bowl, mix together the flour, sugar, baking soda, and baking powder.
Add the butter, egg whites, vanilla extract, sour cream, and milk to the dry ingredients. Beat until the batter is smooth.
Fill cupcake liners 2/3 full with the batter and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. To cool, place the cupcakes on a wire rack.

For the filling, heat the heavy cream in a saucepan until it simmers.
Whisk the egg yolks, cornstarch, and granulated sugar in a another basin.
. Gradually add the hot cream to the egg mixture while whisking continuously.
Pour the mixture back into the saucepan and cook over medium heat, stirring constantly, until the filling thickens. Remove from heat and stir in the vanilla extract. Cover the filling and chill it in the refrigerator.
For the chocolate ganache, heat the heavy cream in a saucepan until it simmers .After pouring the heated cream over the chopped chocolate, let it a minute to settle.
Stir until the ganache is smooth and well combined.
Once the cupcakes are completely cooled, remove a small piece from the center of each cupcake. Fill the cavity with the chilled pastry cream filling.
Pour a teaspoon of the chocolate ganache over the filled cupcakes, allowing it to drip down the sides. Let the ganache set.
