Birria Wings with Consomé

Ingredients:

1/4 cup sweet chili sauce
2 tablespoons soy sauce
One tablespoon of spicy chili-garlic sauce, like Sriracha
2 teaspoons dark sesame oil
1 teaspoon grated fresh ginger
16 chicken wings, wingtips removed
Vegetable oil
Kosher salt
Fresh ground black pepper

Instructions:

In a small bowl, whisk together the sweet chili sauce, soy sauce, hot chili-garlic sauce, sesame oil, and grated ginger to make the glaze.
Trim any excess skin from the edges of the chicken wings.
Lightly brush or spray the wings with vegetable oil and season them with salt and pepper to taste.
Grill the chicken wings over medium heat until the skin begins to crisp, about 10 minutes, turning them once or twice during cooking.
Brush the wings with the glaze and continue to grill them until the meat is no longer pink at the bone, about 8 to 10 minutes. Turn the wings and brush them with the glaze 2 or 3 times during this stage.
Serve the Birria wings warm.
Recipe Notes:

Alternatively, you can bake the wings in the oven. Preheat the oven to 375°F (190°C) and bake the wings for 45 minutes. Then, slather on the glaze and increase the oven temperature to 400°F (200°C) and bake for another 20 minutes, or until the skin is browned and the sauce thickens.
