Step 1: Soak the Liver
- Rinse the liver slices under cold water.
- Place them in a bowl and cover with milk.
- Let them soak for 30 minutes.
✅ This step helps remove bitterness and makes the liver more tender.
Step 2: Prepare the Onions
- Slice the onions into thin rings.
- Heat 1 tablespoon butter and 1 tablespoon oil in a large skillet over medium heat.
- Add the onions and cook slowly for 10–15 minutes, stirring occasionally.
- Cook until the onions are soft, golden, and caramelized.
- Remove onions from the pan and set aside.
Step 3: Coat the Liver
- In a plate or bowl, mix flour, salt, pepper, and paprika.
- Remove the liver from milk and pat dry with paper towels.
- Lightly coat each piece in the seasoned flour.
Step 4: Cook the Liver
- Add 2 tablespoons butter to the same skillet.
- Heat over medium-high heat.
- Place liver slices in the pan without overcrowding.
- Cook for 2–3 minutes per side.
⚠️ Do not overcook or the liver will become tough.
Step 5: Combine with Onions
- Return the caramelized onions to the skillet.
- Mix gently with the liver.
- Cook together for 2 minutes so the flavors blend.
Optional Step: Make Gravy
- Pour 1 cup beef broth into the pan.
- Add the cornstarch mixture.
- Stir and simmer until the sauce thickens.

For extra tenderness, cook liver just until slightly pink inside. Overcooking is the main reason liver becomes tough.
