Beef Liver and Onions

Step 1: Soak the Liver

  1. Rinse the liver slices under cold water.
  2. Place them in a bowl and cover with milk.
  3. Let them soak for 30 minutes.

✅ This step helps remove bitterness and makes the liver more tender.

Step 2: Prepare the Onions

  1. Slice the onions into thin rings.
  2. Heat 1 tablespoon butter and 1 tablespoon oil in a large skillet over medium heat.
  3. Add the onions and cook slowly for 10–15 minutes, stirring occasionally.
  4. Cook until the onions are soft, golden, and caramelized.
  5. Remove onions from the pan and set aside.

Step 3: Coat the Liver

  1. In a plate or bowl, mix flour, salt, pepper, and paprika.
  2. Remove the liver from milk and pat dry with paper towels.
  3. Lightly coat each piece in the seasoned flour.

Step 4: Cook the Liver

  1. Add 2 tablespoons butter to the same skillet.
  2. Heat over medium-high heat.
  3. Place liver slices in the pan without overcrowding.
  4. Cook for 2–3 minutes per side.

⚠️ Do not overcook or the liver will become tough.

Step 5: Combine with Onions

  1. Return the caramelized onions to the skillet.
  2. Mix gently with the liver.
  3. Cook together for 2 minutes so the flavors blend.

Optional Step: Make Gravy

  1. Pour 1 cup beef broth into the pan.
  2. Add the cornstarch mixture.
  3. Stir and simmer until the sauce thickens.

Serve beef liver and onions with:

  • Creamy mashed potatoes 🥔
  • Buttered rice 🍚
  • Steamed vegetables 🥦
  • Fresh bread

✅ Chef Tip:
For extra tenderness, cook liver just until slightly pink inside. Overcooking is the main reason liver becomes tough.
