Finish with around six Phyllo layers on top. Brush any remaining melted butter over the Phyllo layer on top.
With an extremely sharp knife, slice through each layer of baklava. . Make 3-4 lengthwise slices, and then make diagonal cuts to create diamond shapes.
Bake in a preheated 350-degree Fahrenheit (175 degrees Celsius) oven for about 45 minutes, or until the baklava is golden and crisp.
While the baklava is baking, heat the honey in a saucepan until it’s close to boiling. Add the grated lemon zest and vanilla essence and stir.
When the baklava is done baking, immediately pour the honey mixture over the top, ensuring it covers all the cut diamond shapes.
