Baked Sweet and Sour Chicken Recipe

Ingredients:

For the chicken:

One and a half pounds of skinless, boneless chicken breasts, sliced into small pieces
1 cup all-purpose flour
1/2 cup cornstarch
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs, beaten
Cooking spray

For the sweet and sour sauce:

1 cup canned pineapple chunks, drained (reserve juice)
1/4 cup ketchup
1/4 cup rice vinegar
2 tablespoons soy sauce
2 tablespoons brown sugar
1 tablespoon cornstarch
1/2 teaspoon garlic powder
1/2 teaspoon ginger powder

For serving:

Steamed white rice
Sliced green onions (optional)
Sesame seeds (optional)

Instructions:

Set the oven’s temperature to 400 degrees Fahrenheit, or 200 degrees Celsius. Apply a thin layer of cooking spray on a baking sheet
In a shallow dish, whisk together the all-purpose flour, cornstarch, salt, and black pepper.
Dip each piece of chicken into the beaten eggs, then coat it in the flour mixture, shaking off any excess. Transfer the coated chicken pieces to the baking sheet that has been ready.
Spray the top of the chicken pieces with cooking spray to help them brown and crisp up in the oven.
Bake the chicken in the preheated oven for approximately 15-20 minutes, or until they are cooked through and golden brown. Flip the chicken halfway through baking to ensure even browning.
As the chicken bakes, make the sour and sweet sauce In a small saucepan, combine the reserved pineapple juice, ketchup, rice vinegar, soy sauce, brown sugar, cornstarch, garlic powder, and ginger powder. Whisk well to combine.
After setting the pot on medium heat, simmer the mixture. Cook for 2-3 minutes, or until the sauce has thickened, stirring occasionally.
Remove the sauce from heat and stir in the drained pineapple chunks.
Once the chicken is cooked, remove it from the oven and transfer it to a large bowl.
Pour the sweet and sour sauce over the baked chicken and toss until all the chicken pieces are evenly coated.
Serve the baked sweet and sour chicken over steamed white rice. If preferred, garnish with sesame seeds and sliced green onions
