Authentic Chili verde

Chili Verde is a traditional Mexican dish made with tender pork simmered in a flavorful green sauce of tomatillos, green chilies, garlic, and cilantro. The sauce has a bright, slightly tangy flavor that perfectly complements the rich pork.

Ingredients

For the Pork

  • 2 lbs (900 g) pork shoulder, cut into bite-sized cubes
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons vegetable oil

For the Green Sauce

  • 1 lb (450 g) tomatillos, husked and rinsed
  • 2–3 poblano peppers
  • 2 jalapeño peppers (adjust for spice level)
  • 1 small onion, chopped
  • 4 cloves garlic
  • ½ cup fresh cilantro
  • 1 teaspoon cumin
  • 1 cup chicken broth
  • Salt to taste
