Ingredients:
1/3 cup light brown sugar
1 teaspoon cinnamon, plus 1 1/2 teaspoons ground cinnamon
2/3 cup sugar, plus 2 tablespoons sugar
1/2 cup unsalted butter
2 large eggs
1 1/2 teaspoons pure vanilla extract
1 1/2 cups flour
1 3/4 teaspoons baking powder
1/2 cup whole milk
Two big Granny Smith apples, cut and peeled
Instructions:
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius) and spray a 9×5-inch glass loaf pan with baking spray.
In a small bowl, mix together the brown sugar and 1 teaspoon of ground cinnamon. Set aside.
In a large bowl, beat together the sugar and butter until well combined and fluffy.
One egg at a time, beat in until well blended.
Stir in the vanilla extract.
In a medium bowl, whisk together the flour and baking powder until well combined.
Gradually mix the dry ingredients into the batter.
Mix in the milk until the batter is smooth.
Transfer half of the batter into the prepared loaf pan.
Layer the chopped apples on top of the batter.
Pour the remaining batter over the chopped apples.
Sprinkle the brown sugar and cinnamon mixture on top of the batter and lightly press it into the batter.
Preheat the oven and bake for 50–65 minutes, or until a toothpick inserted in the center comes out clean.
