Ingredients:
4 apples, peeled and sliced
1/2 cup sugar
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 cup water
Flour tortillas (6-inch size)
Oil for frying tortillas
1/2 cup sugar-cinnamon mixture
Whipped cream
Instructions:
In a saucepan, combine the sliced apples, sugar, cinnamon, nutmeg, and water.
Stir until well blended, then cover the saucepan and cook over medium heat, stirring frequently, for about 10 minutes or until the apples are semi-soft.
Use one tablespoon of cornstarch and three to four tablespoons of water to thicken the sauce if necessary. When the sauce thickens, add the mixture to the pot and stir.
Heat oil in a skillet over medium heat. Fold each tortilla in half and place the bottom half in the hot oil for a few seconds. Then lay it on one side until it browns, and flip it to brown the other side. Remove the tortilla from the oil and sprinkle it with the sugar-cinnamon mixture.
Divide the apple pie filling among the taco shells.
Top the filled tacos with whipped cream and sprinkle a little more of the sugar-cinnamon mixture on top.
