Amish Cinnamon Bread

Ingredients:

For the Batter:

1 cup butter, softened
2 cups sugar
2 eggs
2 cups buttermilk or homemade buttermilk (2 cups milk plus 2 tablespoons vinegar or lemon juice)
4 cups flour
2 teaspoons baking soda

For the Cinnamon/Sugar Mixture:

2/3 cups sugar
2 teaspoons cinnamon

Instructions:

Preheat the oven to 350 degrees
In a mixing bowl, cream together the softened butter, 2 cups of sugar, and eggs.
Add the buttermilk, flour, and baking soda to the mixture and mix well.
Divide the batter in half (or slightly less) and pour 1/4 of the batter into each greased loaf pan.
In a separate bowl, mix together the 2/3 cup of sugar and cinnamon to make the cinnamon/sugar mixture.
Sprinkle 3/4 of the cinnamon/sugar mixture on top of the batter in each pan.
Add the remaining batter to the pans and sprinkle the remaining cinnamon/sugar mixture on top.
Use a knife to swirl the batter and cinnamon/sugar mixture together.
Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the bread comes out clean.
Allow the bread to cool in the pans for 20 minutes before removing them.
