Ingredients:
1 cup butter
1/2 cup packed brown sugar
1 teaspoon vanilla extract
3 cups quick cooking oats
1 cup semisweet chocolate chips
1/2 cup peanut butter
Instructions:
Prepare the Pan:
Grease a 9×9 inch square pan.
Make the Oat Mixture:
Melt the butter in a large saucepan over medium heat.
Add the vanilla essence and brown sugar and stir until thoroughly blended.
Add the oats and cook over low heat for 2 to 3 minutes, stirring continuously, until the ingredients are well blended.
Half of the oat mixture should be pressed into the pan’s bottom.
Reserve the other half for topping.
Prepare the Chocolate Mixture:
Melt the peanut butter and chocolate chips in a small heavy saucepan over low heat, stirring often, until smooth.
Using a knife or the back of a spoon, evenly distribute the chocolate mixture over the pan’s oat crust.
Add the Topping:
Crumble the leftover oat mixture over the chocolate layer after gently pressing it in.
Refrigerate and Serve:
Cover the pan and refrigerate for 2 to 3 hours or until firm.
Before slicing the bars into squares, allow them to come to room temperature.
