Ingredients:
1/2 cup unsalted butter (114 g), melted
1 1/2 cups peanut butter (360 g)
2 1/2 cups powdered sugar (400 g)
One cup (175 g) of chocolate chips, plenty for dipping
Instructions:
Prepare the Mixture: In a mixing bowl, combine the melted butter, peanut butter, and powdered sugar until well blended. Adjust the amount of powdered sugar to achieve the desired consistency; more powdered sugar will make the mixture drier, while less will make it wetter.
Form Balls: Shape the mixture into 1-inch balls. Place them on a baking sheet lined with wax paper and freeze for about 20 minutes or until firm.
Melt Chocolate: Place the chocolate chips in a microwave-safe bowl. Microwave in 15-second intervals, stirring after each interval, until the chocolate is fully melted and smooth. Adding a small amount of vegetable shortening can help thin the chocolate for easier dipping.
Take the peanut butter balls out of the freezer and dip them.
Using a toothpick or fork, dip each ball into the melted chocolate, leaving a small circle of peanut butter exposed on the top. Return the balls that have been dipped to the wax paper.
