Ingredients:
1/2 cup (1 stick) unsalted butter
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup chocolate chips or chunks (optional)
1/2 cup chopped nuts (optional)
Instructions:
Preheat the Oven: Preheat your oven to 350°F . Lightly grease or line a muffin pan with paper liners.
Melt the Butter: Melt the butter on the stovetop or in a dish that is safe to use in the microwave. After melting, pour it into a mixing dish.
Combine Wet Ingredients: Gently stir the melted butter into the granulated sugar. Beat in the eggs one at a time, then add the vanilla essence.
Mix Dry Ingredients: Whisk together the flour, baking powder, salt, and cocoa powder in an other basin.
Mix Together: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Add Extras: If using chocolate chips or nuts, fold them into the batter.
Fill Muffin Pan: Spoon the batter into the prepared muffin pan, filling each cup about 2/3 full.
Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
You want the brownies to be fudgy, so watch out not to overbake.
Cool: After letting the brownies cool in the pan for ten or so minutes, move them to a wire rack to finish cooling.
Enjoy: Serve the brownie muffins as is, or with a scoop of ice cream for an extra treat
