Company Chicken Casserole

Ingredients:
4 boneless, skinless chicken breasts
1 cup chicken broth
2 garlic cloves, freshly minced
1 small onion, cut into wedges (use 2 wedges)
4 cups herb-flavored stuffing mix
4 tbsp butter
1 can cream of chicken soup
1 pint sour cream
8 ounces broccoli florets, frozen but thawed

Instructions:

In a large pan, combine the chicken broth, minced garlic, and onion wedges.
Place the chicken breasts on top of this mixture and bring to a boil.
Once boiling, reduce the heat to medium-low, cover, and cook for 20 minutes.
Shred the chicken after removing it from the soup and place it aside.
. Save the broth for later use.
Melt the butter and pour it over the stuffing mix in a large bowl. Mix well.
In a separate bowl, use a hand mixer to blend the sour cream, saved chicken broth, and cream of chicken soup until smooth.
Spread the stuffing mix at the bottom of a casserole dish.
Layer the shredded chicken on top of the stuffing.
Add the thawed broccoli florets over the chicken layer.
Pour the combined soup mixture over the top and spread evenly.
Sprinkle a little of the remaining stuffing mix over the top.
Bake for 30 minutes at 350°F (175°C) in a preheated oven.
