Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper (to taste)
2 tbsp olive oil
1 cup mushrooms (sliced)
2 cloves garlic (minced)
2 cups fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 tsp nutmeg
Additional Parmesan and fresh parsley (for garnish)
Instructions:
Season chicken with salt and pepper.
Heat olive oil in a skillet and cook chicken until golden brown. Set aside.
In the same skillet, sauté the mushrooms and then add the garlic.
Stir in spinach until wilted.
Reduce the heat and simmer the cream, Parmesan, and nutmeg until the sauce thickens.
Return chicken to skillet; spoon sauce over chicken. Cook for 2-3 minutes.
Garnish with Parmesan and parsley before serving.
