Traditional Irish Beef Stew

Ingredients:

2 pounds beef chuck, cut into 1-inch cubes
1/4 cup all-purpose flour
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
3 large carrots, peeled and sliced
3 potatoes, peeled and cubed
1 teaspoon dried thyme
1 teaspoon dried rosemary
4 cups beef broth
2 tablespoons tomato paste
2 cups sliced mushrooms
Salt and pepper to taste
Chopped fresh parsley, for garnish

Directions:

To get a uniform coating, toss the meat pieces in flour.
Warm up the olive oil in a big saucepan over medium-high heat. In batches, add the meat and brown it all over. Take out and place the meat aside.
Add the minced garlic and chopped onion to the same saucepan.
. Cook until the onion becomes translucent.
Return the beef to the pot. Add the sliced carrots, cubed potatoes, dried thyme, dried rosemary, beef broth, and tomato paste. Stir everything together to combine.
Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for about 1.5 hours, or until the beef is tender.
Add the sliced mushrooms and continue cooking for an additional 30 minutes.
Season the stew with salt and pepper to taste.
Add some freshly cut parsley to the top before serving.
