Lemon Lush Dessert

Ingredients:

Crust:

1 cup all-purpose flour
2 tablespoons granulated sugar
1/4 cup of nuts, chopped finely (walnuts or pecans)

1/2 cup unsalted butter, softened

Cream Cheese Layer:

1 package (8 oz) cream cheese, softened
1 cup granulated sugar
Zest of 1 lemon
Juice of 1 lemon
1 container (8 oz) whipped topping, thawed

Pudding Layer:

Two cartons of quick lemon pudding (3.4 oz each).
3 cups cold milk

Top Layer:

1 container (8 oz) whipped topping, thawed

Optional Garnish:

Chopped nuts
Lemon zest
Lemon slices
Instructions:

For the Crust:

Preheat your oven to 350 degrees F (175 degrees C).

Apply some cooking spray to a 13 x 9-inch baking dish.
In a large bowl, combine the flour, sugar, chopped nuts, and softened butter. Mix until well combined.
Fill the baking dish with the mixture, pressing it firmly in.

Bake for 15-18 minutes or until the crust is golden brown. Let it cool completely.

Cream Cheese Layer:

In a mixing bowl, cream together the softened cream cheese and granulated sugar until smooth.
Add the whipped topping, lemon zest, and lemon juice and stir until thoroughly blended.
Cover the chilled crust with the cream cheese mixture.
Place in the fridge to chill for a minimum of half an hour.

Pudding Layer:

Mix the cold milk and quick lemon pudding mix in a large bowl until the mixture is smooth and creamy.
Spread the prepared pudding over the cream cheese layer.
Let the pudding cool in the fridge for a minimum of fifteen minutes, or until it solidifies.
Top Layer:

Cover the pudding layer that has set with the remaining whipped topping.

Optional Garnish:

If desired, garnish the Lemon Lush with additional chopped nuts, lemon zest, or lemon slices.

Serving and Storage:

Chill the Lemon Lush dessert in the refrigerator for at least 1 hour before serving.
Serve chilled, cut into squares.
Store any leftovers in the refrigerator, ensuring they are covered to maintain freshness.
