Butter Pecan Pound Cake

Ingredients:

3 cups cake flour
2 cups sugar
1 cup packed brown sugar
3 sticks butter (room temperature)
5 eggs (room temperature)
1 cup whole buttermilk (room temperature)
1/2 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon vanilla extract
1 tablespoon pound cake extract
2 cups toasted pecans, chopped

Thick Glaze:

2 cups powdered sugar
4 oz butter
4 oz cream cheese
4 teaspoons half and half

Instructions:

Preheat your oven to 325°F (165°C). Use cooking spray or butter to grease a tube pan.

In a large mixing bowl, cream together the butter and sugars until smooth and creamy, about 3-7 minutes.
Slowly add the eggs one at a time, mixing well after each addition.
Add the vanilla extract and pound cake extract, and mix until well combined.
Mix the cake flour, baking powder, and salt in a another basin.
Alternately add the buttermilk and the dry ingredients to the butter mixture gradually.
Start and end with the dry ingredients, mixing well after each addition.
Stir in the chopped toasted pecans until evenly distributed in the batter.
Pour the batter into the prepared tube pan, smoothing the top with a spatula.
Bake in the preheated oven for about 1 hour and 10 minutes, checking after 45 minutes. When a toothpick put into the middle comes out clean, the cake is done.
After taking the cake out of the oven, let it to cool for twenty minutes in the pan on a wire rack.
. Then carefully remove the cake from the pan and place it on a cake plate.
To make the thick glaze, combine the powdered sugar, butter, cream cheese, and half and half in a bowl. Mix until smooth and creamy.
Once the cake has cooled, drizzle the thick glaze over the top of the cake, allowing it to flow down the sides.
To keep the cake from drying out, carefully cover it.
. A tight-fitting cake pan or cake dome works well for this purpose.
