Homemade Thin Mints

Ingredients:

For the Cookies:

1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt
1/2 cup unsalted butter, at room temperature
1 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract

For the Coating:

8 ounces dark chocolate, chopped
1/2 teaspoon peppermint extract

Instructions:

Mix together the flour, salt, and cocoa powder in a medium-sized bowl. Put aside.
Beat the butter and sugar in a large bowl for two to three minutes, or until the mixture is light and fluffy. Beat in the vanilla essence and egg until thoroughly blended.
Add the dry ingredients to the wet ones gradually, mixing only until a dough forms and the ingredients are just incorporated.

Split the dough in half, then roll each half into a log with a diameter of around 1 1/2 inches. Each log should be securely wrapped in plastic wrap and chilled for at least an hour, or until it becomes solid.
Set the oven’s temperature to 175°C/350°F. Using parchment paper, line two baking pans.
Cut the cold dough into rounds that are 1/4 inch thick, and arrange them on the baking sheets that have been prepared, about 2 inches apart.
Bake for 10 to 12 minutes, or until the cookies are set and just firm to the touch. Take out of the oven and allow to rest for five minutes on the baking sheets, then place to a wire rack to cool down entirely.
After the cookies cool, get the coating ready. Simmer a kettle of water and place a heatproof dish filled with chopped chocolate over it. Mix until smooth and melted. Take off the heat and mix in the essence of peppermint.
Using a fork to completely coat each cookie, dip it into the melted chocolate. After removing any extra chocolate, place the coated cookie on a baking sheet covered with paper.
To ensure the chocolate sets, refrigerate the baking sheet for approximately fifteen minutes.
After they’re set, keep the cookies at room temperature in an airtight container.
