Grandma’s Peach Cobbler Pie

Ingredients:

2 lbs sliced frozen peaches
1 cup granulated sugar
8 tbsp butter
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 1/2 cup water
2 tsp vanilla extract
3 tbsp all-purpose flour

Crust:

1 cup butter-flavored shortening
2 1/2 cups all-purpose flour
2 tbsp sugar
1 tsp salt
1/3 cup ice water

Directions:

In a mixing bowl, add 2 cups of sifted all-purpose flour and the shortening. Use a pastry cutter or dough hooks to combine the ingredients until the mixture resembles crumbs.
Once the mixture starts to resemble little pieces, pour in 1/3 cup of icy water.
Form a ball with the dough, then cover it with plastic wrap and refrigerate for 45 minutes.
Place the sliced peaches in a large pot. Add the water, sugar, cinnamon, and nutmeg. Turn the heat to medium-high.
Add the vanilla and butter after the peach mixture begins to boil.
Stir to combine.
In a separate bowl, mix the remaining 1/2 cup of water with 3 tbsp of all-purpose flour. Sprinkle this mixture into the peach mixture and stir. Reduce the heat to low.
Preheat the oven to 375°F (190°C).
Roll out the chilled dough and cut it in half. With one of the dough halves, roll it out and cut it into inch squares. Place the squares on a cookie sheet and bake for 7 minutes at 375°F.
Pour the peach mixture into a 13×9-inch baking dish. Remove the baked squares from the oven and toss them into the peach mixture, folding them in.
Roll out the remaining dough and cut it into strips. Place the dough strips on top of the cobbler in a lattice style.
Bake the peach cobbler pie for 40 minutes at 375°F.
Let the pie cool down, then serve with a scoop of vanilla ice cream.
