Ingredients:
1 ½ tsp butter
1 small onion, chopped
2 pounds cooked chicken, cut or shredded
1 can cream of chicken soup
½ cup mayonnaise
1 cup milk
½ cup roasted red pepper, chopped
1 ½ cup mild cheddar cheese
1 can refrigerated biscuit dough
Instructions:
Preheat the oven to 350°F (175°C). Grease the bottom and sides of a baking dish.
Melt the butter in a pan over a medium heat. When the onion starts to soften, add it and sauté it.
In a large mixing bowl, combine the cooked chicken, cream of chicken soup, mayonnaise, milk, sautéed onion, and roasted red pepper.
Blend well until all the components are uniformly blended.

Sprinkle the remaining cheese over the biscuits.
Return the baking dish to the oven and bake for another 20 minutes or until the biscuits are golden brown and the cheese is melted and bubbly.
Remove from the oven and let the casserole sit for a few minutes before serving.
