Ingredients:
Six cups of powdered sugar, plus additional if necessary
One big russet potato, mashed and chilled, makes about 1/2 cup.
1/3 cup creamy peanut butter
1 tablespoon milk
1 teaspoon vanilla extract
1/8 teaspoon salt
Instructions:
In a large bowl, beat the mashed potato, milk, vanilla extract, and salt with an electric mixer on medium speed for about 2 minutes until well combined.
Gradually add the powdered sugar, 1 cup at a time, mixing well after each addition, until a thick dough forms. If the dough is too sticky, add more powdered sugar, a tablespoon at a time, until the desired consistency is reached. The dough should be slightly thicker than cookie dough.
Form the dough into a ball and dust it with powdered sugar.
On a sheet of wax or parchment paper, roll out the dough into a rectangle about 1/8-inch thick. Trim the rectangle to a size of approximately 10×12 inches.
Generously sprinkle powdered sugar over the top of the dough. Place another piece of parchment paper on top and carefully invert the dough, removing the original paper that was used to roll it out.
Spread the peanut butter evenly over the dough, covering the entire surface.
Starting from the long side, roll the dough tightly using the parchment paper as a guide, similar to a jelly roll.
Wrap the rolled dough in parchment paper and freeze it for 1 hour to firm it up.
After chilling, remove the dough from the freezer and unwrap it.Slices of the roll 1/4 inch thick should be cut.
