Swedish Meatball Noodle Bake Recipe

Ingredients:
For the Meatballs:

2 tbsp olive oil
1 pound ground beef
1 large egg, beaten
1/2 cup breadcrumbs
1/2 onion, grated
1/2 tsp garlic powder
1/4 tsp ground nutmeg
1 tsp Kosher salt
1/2 tsp freshly ground black pepper

For the Casserole:

2 1/2 cups egg noodles
1 cup beef broth
1 tbsp Worcestershire sauce
1 pint heavy cream
1 1/2 cups Swiss cheese, grated
Fresh parsley, chopped (for serving)
To taste, add freshly ground black pepper and kosher salt.

Instructions:

Preheat the oven to 375 degrees Fahrenheit. Grease a 9×13-inch baking dish with nonstick spray and set it aside.
In a large bowl, combine the ground beef, breadcrumbs, beaten egg, grated onion, garlic powder, nutmeg, salt, and black pepper. Blend well until the components are barely blended.

Scoop and roll 1 1/2 tablespoons of the meat mixture into balls. Repeat with the remaining mixture.
In a large pan, heat the olive oil over medium-high heat.
. Add the meatballs to the hot oil and cook until all sides are browned. Transfer the cooked meatballs to a plate and set them aside.
Cook the egg noodles in a large pot of salted boiling water for 2 minutes less than the package directions. After draining, place the noodles aside.

In the same skillet used for the meatballs, add the beef broth, Worcestershire sauce, and heavy cream. Scrape up any browned bits on the bottom of the pan and let the mixture simmer for about 10 minutes until slightly thickened. Season with salt and pepper to taste. Remove the skillet from the heat.
Place the cooked egg noodles in the prepared baking dish. Top with the meatballs. Pour the sauce evenly over the noodles and meatballs. Overtop, scatter the grated Swiss cheese.

Bake in the preheated oven for approximately 20 minutes, or until the cheese has melted and is bubbly.
After taking the casserole out of the oven, leave it alone for around five minutes.
Sprinkle with fresh chopped parsley before serving.
