Easy Mexican Taco Lasagna

Ingredients:

1 pound lean ground beef
1 (1 oz) package taco seasoning mix (such as Ole El Paso or Taco Bell)
1 (14 oz) can peeled and diced tomatoes with juice
6 (6-inch) soft corn tortillas
1 cup salsa
1/2 cup shredded Colby cheese (or Mexican/taco-style cheese)

Instructions:

Preheat your oven to 350 degrees Fahrenheit
In a deep cast-iron skillet over medium-high heat, brown the ground beef, breaking it up into small pieces. Stir frequently to ensure even cooking. Pour out any excess grease before adding other ingredients.
Once the ground beef is cooked, stir in the taco seasoning mix and diced tomatoes with their juice.
Line a 9×13-inch baking dish with half of the corn tortillas.
Spoon the ground beef mixture onto the tortillas, spreading it evenly.
Top with the remaining tortillas.
Spread salsa over the top layer of tortillas, covering them completely.
Sprinkle the shredded Colby cheese (or your choice of cheese) over the salsa.
Bake for 20 to 30 minutes, or until the cheese is bubbling and melted, in a preheated oven.
Take it out of the oven and let it to cool a little.
Serve and enjoy!
