Big Apple Fritters

Ingredients:

1 1/2 cups all-purpose flour
1/4 cup sugar
2 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
1/3 cup milk
2 eggs
3 tablespoons applesauce
Peel, core, and dice two big Granny Smith or Honey Crisp apples.

Canola oil for frying

For the Glaze:

2 cups confectioners’ sugar
1/4 cup milk
1/2 teaspoon vanilla extract

Instructions:

After lining baking pans with wax paper, place cooling racks on top and reserve.
Mix the flour, sugar, baking powder, cinnamon, and salt in a medium-sized bowl.
Create a well in the center of the dry ingredients and add the milk, eggs, and applesauce.
Stir the mixture just until combined, being careful not to overmix.
Fold in the diced apples.
In a heavy cast iron skillet, Dutch oven, or deep fryer, heat 1 1/2 to 2 inches of canola oil to 375°F (190°C).
Drop about 1/4 cup of batter per fritter into the hot oil, spreading it out slightly as you drop it.
Cook each side of the fritters until golden brown, approximately 2 minutes per side.

After taking the fritters out of the pan, drain any extra oil by placing them on paper towels.
In a large bowl, whisk together the confectioners’ sugar, milk, and vanilla extract to make the glaze.
Dunk each fritter into the glaze, turning it over to ensure both sides are coated.
Place the glazed fritters on the wire racks to air dry and allow any excess glaze to drip off.
Enjoy the delicious Big Apple Fritters! They are best enjoyed fresh and still warm from the fryer.
