Slow Cooker French Onion Meatballs

Ingredients:

1 lb ground beef
1 packet French onion soup mix
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1/2 cup grated Parmesan cheese
2 tablespoons olive oil
2 large onions, thinly sliced
2 cups beef broth
1/2 cup red wine (optional)
1 tablespoon Worcestershire sauce
Salt and pepper to taste
Fresh thyme for garnish

Directions:

Ground beef, French onion soup mix, breadcrumbs, milk, egg, and grated Parmesan cheese should all be combined in a big dish. Stir thoroughly to ensure that all ingredients are combined equally. Shape the blend into meatballs.
In a pan over medium heat, warm the olive oil. Brown the meatballs on both sides, working in batches as necessary. Place the meatballs that have browned into the slow cooker.

In the same skillet, add the thinly sliced onions and cook until caramelized, stirring occasionally. This process may take around 10-15 minutes. Once the onions are caramelized, transfer them to the slow cooker on top of the meatballs.
In a separate bowl, mix together the beef broth, red wine (if using), and Worcestershire sauce. Pour this mixture over the meatballs and onions in the slow cooker.
Set the slow cooker to low heat and cook for 6-8 hours, or on high heat for 3-4 hours. The meatballs should be cooked through and tender. To taste, add more salt and pepper to the seasoning.
