Banana Cream Cheesecake Recipe

Ingredients:

For the Crust:

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Banana Cheesecake Filling:

4 ripe bananas, mashed (about 2 cups)
3 (8-ounce) packages cream cheese, softened
1 1/4 cups granulated sugar
1 teaspoon vanilla extract
3 large eggs
1/4 cup all-purpose flour

For the Banana Cream Topping:

2 cups heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
2 ripe bananas, thinly sliced
Lemon juice (to prevent browning)

Instructions:

Preheat the oven to 325°F (163°C).

Prepare the Crust:

a. In a mixing bowl, combine the graham cracker crumbs, 1/4 cup of granulated sugar, and melted butter.Stir until the crumbs are covered all over.
b. Ensure that the crumb mixture is uniformly spread in the bottom of a 9-inch springform pan by pressing it in. Alternatively, you can push the crumbs up the pan’s sides a little bit.

Prepare the Banana Cheesecake Filling:

a. In a separate mixing bowl, beat the cream cheese until smooth and creamy.
b. Add the mashed bananas, 1 1/4 cups granulated sugar, and vanilla extract. Mix until well combined.
c. Add the eggs one at a time, thoroughly combining each time.
d. Add 1/4 cup all-purpose flour and stir until smooth batter is reached.

Bake the Cheesecake:

a. Cover the prepared crust with the banana cheesecake filling.

b. Bake for 60 to 70 minutes in a preheated oven, or until the center is still somewhat jiggly and the sides are firm.
c. Close the oven door and turn off the oven. Give the cheesecake approximately an hour to cool in the oven.
Prepare the Banana Cream Topping:

a. In a separate mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
b. To keep the two ripe bananas from browning, slice them and stir them in lemon juice.
Assemble the Cheesecake:
a. Once the cheesecake has cooled, spread the sliced bananas over the top.
b. Gently cover the bananas with the whipped cream.

Chill and Serve:

a. To give the cheesecake time to set, place it in the refrigerator for at least four hours, ideally overnight.
