Best Chili Cheese Dogs

Ingredients:

Eight hot dogs the size of buns (ideally uncured beef franks)

8 hot dog buns
2 2/3 cups homemade chili
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
Half a cup of finely chopped yellow or red onions
Mustard, ketchup, spicy brown mustard, relish (optional)

Instructions:

Preheat a gas grill to 425 degrees.
If needed, cut the hot dog buns (not all the way through) and heat the chili.
Grill the hot dogs on the preheated grill until lightly charred, which takes about 10 minutes.
Cover a large baking sheet with parchment paper for easy cleanup. Arrange the hot dog buns on the baking sheet, cut side up. Use the broiler to brown the buns, rotating the baking sheet several times.
Preheat the oven to 375 degrees.

Evenly distribute half of each cheese within the buns.. Add the grilled hot dogs and any desired condiments. Top with 1/3 cup of chili and the remaining cheese.
Bake in the preheated oven for 15-20 minutes or until the cheese is melted and everything is heated through.
Top with chopped onions and any other desired toppings.
