Ingredients:
1/2 pound ground breakfast sausage
6 large eggs, beaten
8 slices Colby-Jack cheese
4 tablespoons soft butter, divided
8 slices sourdough bread
Directions:
In a large non-stick skillet, cook and crumble the breakfast sausage until it is no longer pink. Transfer the cooked sausage to a medium mixing bowl lined with paper towels. Set it aside. The skillet may be cleaned using a paper towel.
Melt two tablespoons of butter over medium-high heat in the same skillet. Pour the beaten eggs into the pan. As the eggs begin to set, gently stir them to make scrambled eggs until the liquid is almost gone. Remove the pan from the heat.
Sausage should remain in the dish once the paper towel has been removed from underneath it. Gently toss the sausage mixture into the basin containing the scrambled eggs.
After giving the skillet a wipe with a paper towel, preheat it to medium.
Toast each slice of bread by buttering one side. Put one slice of bread, butter side down, in the pan.
Top the bread slice with one slice of Colby-Jack cheese. Scoop about 1/2 cup of the sausage-egg mixture over the cheese. Add another slice of cheese on top of the mixture, and then place another slice of buttered bread on top with the butter side facing up.
Cook the sandwich until the bread begins to turn golden brown, approximately 3-4 minutes. Turn the sandwich over carefully, and cook the other side until golden brown.
Remove the sandwich from the skillet and place it on a cutting board. Optionally, cut it in half.
With the remaining bread, cheese, and sausage-egg combination, repeat the procedure.
Serve the Breakfast Grilled Cheese immediately.
