Ingredients:
One big onion, cut in half, peeled, and thinly sliced
Salt and pepper
1 lb ground beef
1 tablespoon butter
1 tablespoon vegetable oil
4-8 slices American cheese
Mayo, mustard, and pickles for serving
4 hamburger buns, toasted
Instructions:
In a bowl, combine the thinly sliced onions and 1 teaspoon of salt. Toss to combine. Transfer the onions to a colander and let them sit for 30 minutes, tossing occasionally.
Transfer the onions to a clean dish towel, gather the edges together, and squeeze out as much liquid as possible from the onions. Do this over the sink or a large bowl since the onions will release liquid.
Arrange the onions on a baking sheet with a rim, forming 4 distinct mounds.
Form the ground beef into 4 lightly packed balls. Place each beef ball on top of an onion mound and firmly flatten the beef with your palm so that the onion adheres to the beef. The patties should be about 4 inches in diameter.
Give the meat patties a liberal amount of salt and pepper.
Melt the butter and vegetable oil in a 12-inch skillet over medium heat.
The beef patties should be gently moved to the pan, onion side down, using a broad spatula. Simmer the onions for 6 to 8 minutes, or until they are deeply golden brown and starting to crisp up around the edges.
Turn the burgers over and turn the heat up to high. Cook for about 2 minutes until well browned on the second side.
Place 1 or 2 slices of American cheese on each burger and allow it to melt.
Spread mayo and mustard on the top buns, and add pickles if desired.
Place each burger on a bottom bun and serve immediately.
