Ingredients:
2 cups cornmeal
1/2 cup flour
Salt, to taste
Pepper, to taste
1 teaspoon cayenne pepper
1 teaspoon garlic powder
1 teaspoon onion powder
4 lbs lobster tails, cleaned in the shell
2 quarts oil for deep-frying
Directions:
Mix the cornmeal, flour, salt, pepper, cayenne pepper, garlic powder, and onion powder in a gallon-sized zip-lock bag. To blend the ingredients, give the bag a good shake.
Clean the lobster tails while keeping the tail in the shell. Set them aside.
Heat the vegetable oil in a deep fryer or a large, deep skillet (e.g., cast iron pan) to a temperature of 365°F (185°C).
Place half of the lobster tails in the bag with the cornmeal mixture. Shake the bag well to coat the tails completely. Remove the coated tails from the bag and set them on a rack placed over a tray to catch any drippings and keep the work area clean. Proceed with the remaining tails in the same manner.
One lobster tail at a time, deep fried them in the heated oil for about 4 minutes, or until they start to color slightly.
. Make sure to fry them one at a time to ensure even cooking. Let the fried lobster tails dry on paper towels to absorb excess oil.
