Scones

Ingredients:

3 cups self-raising flour
1/2 cup sugar
1 teaspoon salt
1 tablespoon baking powder
2 teaspoons vanilla essence
200g ice-cold butter
1 cup plain yogurt or Amasi (hodzeko)
2 eggs + 1 extra for brushing the top

Method:

In a large bowl, sieve the flour.
Add the salt, baking powder, and sugar to the flour. Mix well.
Cut the ice-cold butter into cubes and rub it into the flour mixture until it resembles breadcrumbs.
Add the eggs, vanilla essence, and half of the yogurt (you may not need all of it).
Stir to combine into a soft dough.
Sprinkle flour on your work surface. Roll out the dough and cut it using a cutter (if you don’t have a cutter, use a cup or any round object).
Transfer the cut dough onto a greased tray and brush the tops with beaten egg.
Bake the scones in a preheated oven at 180°C (350°F) for 15-20 minutes, or until they have risen and turned golden brown on top.
