Homemade Chocolate Roll

Ingredients:

For the chocolate cake:

4 eggs
125g sugar
4 tablespoons milk
130g flour
4 tablespoons bitter cocoa

For the cream:

125g butter
10 cl liquid cream
100g icing sugar
125g dark chocolate

For the glaze:

200g dark chocolate
150g icing sugar

Preparation:

Cake:
Preheat the oven to 180°C (350°F). In a mixing bowl, beat the egg yolks and sugar until the mixture becomes pale and creamy. Add the flour and milk, then mix well. Add the bitter cocoa and stir until well combined.
Beat the egg whites in a another dish until firm peaks form. Gently fold the beaten egg whites into the cake mixture using a spatula. Pour the mixture into a rectangular baking mold lined with parchment paper. Bake for 12 to 15 minutes.
Cream:
In a mixing bowl, mix the butter until it becomes soft and creamy. Add the liquid cream and icing sugar, then beat again until well combined. Melt the dark chocolate using a bain-marie (double boiler) and add it to the butter mixture. Stir until smooth.
Glaze:
Melt the dark chocolate using a bain-marie. Add the icing sugar and stir until well combined. Set aside.
Assembly:
Remove the cake from the oven and place it onto a damp cloth sprinkled with a couple of tablespoons of sugar. Across the cake, evenly distribute the cream filling. Roll up the cake tightly, starting from one of the shorter ends. Trim the ends to create a neat and even roll.
Allow the roll to cool completely. Once cooled, cover the roll with the chocolate glaze, spreading it evenly over the surface.
Slice and serve the homemade chocolate roll.
