Homemade Mandel Bread

Ingredients:

1 cup white sugar
2 teaspoons ground cinnamon
3 large eggs
1 cup vegetable oil
2 teaspoons baking powder
2 teaspoons white sugar
1 teaspoon vanilla extract
3 ½ cups all-purpose flour

Preparation:

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius) and place parchment paper on two baking sheets.
In a small bowl, combine 2 teaspoons of white sugar with cinnamon and set aside.
In a separate bowl, mix together 1 cup of sugar, oil, eggs, and vanilla extract. Gradually add the flour and baking powder, mixing until well combined.
Divide the dough into 3 equal portions and shape each portion into a log about 2 inches wide. Place the logs on one of the prepared baking sheets.
Bake in the preheated oven for 20 minutes. Remove from the oven and cut each log into 1/2-inch slices. Lay the slices on their sides on both prepared baking sheets.
Return the baking sheets to the oven and continue baking until the slices are lightly golden, about 10 minutes.
