Asparagus Stuffed Chicken Breast

Ingredients:

4 boneless, skinless chicken breasts
12 asparagus spears, trimmed
1 cup shredded mozzarella cheese
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
2 tablespoons olive oil
Fresh parsley, chopped (for garnish)

Directions:

Preheat your oven to 375°F (190°C).
Gently pound each chicken breast to a uniform thickness by placing it between two pieces of plastic wrap.

Season each chicken breast with garlic powder, paprika, salt, and pepper on both sides.
Take 3 asparagus spears and sprinkle a generous amount of mozzarella cheese on one end of each chicken breast.
Roll up each chicken breast, securing the filling inside with toothpicks or kitchen twine.
In a pan that is oven safe, warm the olive oil over medium-high heat.
Sear the stuffed chicken breasts for about 2 minutes on each side until they turn golden brown.

Place the pan in the oven that has been warmed, and bake for 20 to 25 minutes, or until the chicken is well done.
Before serving, garnish with freshly chopped parsley.
