Ingredients (8 servings):
6 potatoes, peeled
Two cups (220 g) of grated Parmesan cheese, split
3 teaspoons salt, divided
4 tablespoons olive oil, divided
1 sweet onion, diced
1 lb ground beef (455 g)
14 ½ oz diced tomatoes (410 g) (1 can), drained
4 tablespoons fresh parsley, chopped, divided
1 teaspoon paprika (2 g)
½ teaspoon pepper
6 cups spinach (240 g)
2 cloves garlic, minced
1 cup ricotta cheese (250 g)
1 cup shredded mozzarella cheese (100 g)
Preparation:
Preheat the oven to 350˚F (180˚C).
Slice the peeled potatoes into ⅛-inch (3 mm) thick slices using a knife or mandolin.
Line a baking sheet with parchment paper and sprinkle half of the Parmesan cheese evenly over it.
Arrange the potato slices on the parchment paper, overlapping them vertically and horizontally, until the entire pan is filled with potatoes.
Sprinkle the remaining Parmesan cheese evenly over the potatoes. Season with 1 teaspoon of salt.
Bake for 30 minutes or until the potatoes are golden, flexible, and slightly crispy.
In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onions and cook until caramelized for about 15 minutes.
Add the ground beef to the skillet and break it up, mixing it with the onions until cooked. Stir in the diced tomatoes, 3 tablespoons of parsley, paprika, 1 teaspoon of salt, and pepper. Cook the meat until the desired doneness and color.
Remove from heat.
Heat two tablespoons of olive oil in a different pan over medium heat.
Add the spinach and cook until wilted. Add 1 teaspoon of salt and minced garlic. Stir to combine. Remove from heat.
In a bowl, combine the cooked spinach mixture and ricotta cheese. Set aside.
Spread the spinach and ricotta mixture evenly over the cooked potato sheet.
Spread the beef mixture over the spinach. Over the steak, sprinkle shredded mozzarella cheese.
Take one end of the potato sheet with the parchment paper and begin rolling it upward, making sure the ingredients are not coming out the ends.
Once completely rolled, place the potato roll on the parchment paper and bake for 15 minutes.
Garnish with parsley, cut into slices, and serve right away.
