Classic Chocolate Eclairs

Ingredients:

For the Choux Pastry:

1 cup water
1/2 cup butter
1 cup all-purpose flour
1/4 teaspoon salt
4 large eggs
 For the Filling:

2 1/2 cups cold milk
One packet (5 ounces) of instant vanilla pudding mix

1 cup heavy cream
1/4 cup confectioners’ sugar
1 teaspoon vanilla extrac

For the Icing:

One packet (5 ounces) of instant vanilla pudding mix
2 (1 ounce) squares semisweet chocolate
2 tablespoons butter
1 cup confectioners’ sugar
1 teaspoon vanilla extract
3 tablespoons hot water

Instructions:

Preheat the oven to 450 degrees . Grease a cookie sheet and set it aside.
In a medium pot, combine water and butter. Bring it to a boil and whisk until all of the butter melts.
Turn down the heat to low and stir in the salt and flour.. Stir vigorously until the mixture forms a stiff ball and leaves the sides of the pan. Remove from heat.
One egg at a time, add them, beating thoroughly and completely integrated after each addition. Place the dough in 1 1/2 x 4-inch strips onto the prepared cookie sheet by spooning or piping.

Bake in the preheated oven for 15 minutes. Then, reduce the heat to 325 degrees F (165 degrees C) and continue baking for about 20 minutes or until the bottoms sound hollow when lightly tapped. Cool the pastry shells completely on a wire rack.
In a medium bowl, prepare the filling by combining milk and pudding mix according to the package directions. Use an electric mixer to whip heavy cream in a another basin until soft peaks form.
. Beat in confectioners’ sugar and vanilla. Blend the pudding mixture with the whipped cream.

Cut off the tops of the cooled pastry shells with a sharp knife. After the pudding mixture is ready, pour it into the shells and cover them.

For the icing, melt chocolate and butter in a medium saucepan over low heat. Stir in confectioners’ sugar and vanilla. Add hot water, one tablespoon at a time, until the icing reaches a smooth and desired consistency. Take it off the fire and let it to cool a little.
Drizzle the chocolate icing over the filled eclairs. Store the eclairs in the refrigerator until serving.
