Ingredients:
1 package Cheddar Bay Biscuit Mix
1 tsp garlic
1 tsp Italian seasoning
Crab Filling:
1 pound fully cooked lump crab meat
1/4 tsp paprika
1/2 tsp onion powder
1/2 cup or more mayonnaise
1 tbsp mustard
1/2 sleeve Ritz crackers, crushed
1 cup grated Parmesan cheese
Lemon Butter:
Melted butter
1 tsp lemon juice
Instructions:
Prepare the Cheddar Bay Biscuit Mix according to the package directions and set it aside.
Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius) and spray two muffin tins with nonstick spray.
In a bowl, combine the lump crab meat, paprika, onion powder, mustard, mayonnaise, and crushed Ritz crackers. Stir well to combine, adding more mayonnaise if needed to achieve the desired consistency.
Dust your hands with flour and take a scoop of biscuit mix, forming a cup-like shape.
Place a scoop of the crab mixture into the center of the biscuit cup.
Cover the crab mixture with a little more biscuit dough, sealing it on top.
Repeat the process until you have used all the dough and crab mixture.
Place each filled biscuit into a muffin tray.
Bake in the preheated oven for 12 to 15 minutes or until the biscuits are golden brown.
In a separate bowl, mix together melted butter and 1 teaspoon of lemon juice to make the lemon butter.
Once the biscuits are baked, remove them from the oven and brush them with the lemon butter mixture.
Serve the Crab Stuffed Cheddar Bay Biscuits with Lemon Butter while they’re still warm.
