Healthy Cabbage and Apple Yogurt Salad
This wonderfully fresh vegetable and fruit salad is a simple option for anyone looking for a lighter, nutrient-rich addition to their everyday meals. It combines crisp white cabbage, carrots, celery, apples, and a creamy yogurt dressing flavored with garlic and olive oil. The result is refreshing, crunchy, gently creamy, and satisfying without relying on mayonnaise, tartar sauce, or other heavy dressings.
I got the recipe for this vegetable salad from a nutrition expert two years ago when I was looking for easy ways to get in shape. What appealed to me most was how straightforward it was: familiar ingredients, uncomplicated preparation, and a fresh flavor that works well as either a light meal or a side dish.
The salad is delicious, filling, and particularly convenient when you want a quick dinner that fits into a balanced eating routine. The combination of shredded vegetables and apple creates plenty of texture, while the yogurt dressing coats everything without making the salad feel excessively heavy.
In the summer, I also make it for barbecues. Its crisp texture provides a refreshing contrast to richer foods, making it an easy side dish to place on the table alongside other barbecue favorites. Because the salad is served chilled, it is especially pleasant when the weather is warm.
If you are trying to make lighter food choices or simply want to include more vegetables in your meals, this salad can fit naturally into your menu. Rather than depending on heavy sauces, the recipe uses yogurt, garlic, and a small amount of olive oil to create a creamy dressing with plenty of flavor.
If you feel that you have eaten heavier meals than usual while on vacation, this recipe can also provide a refreshing change of pace. After rich meals and mayonnaise-based salads, a crunchy cabbage salad with yogurt dressing can feel lighter while still offering a satisfying combination of flavors and textures.
The vegetables and fruit used in the salad also bring variety to the plate. Cabbage forms the crisp base, carrots add color and a gentle sweetness, celery contributes another fresh and crunchy element, and apples provide a juicy contrast to the savory garlic yogurt dressing.
Remember that no single salad or individual food can determine weight loss or metabolism on its own. A varied, balanced diet and overall lifestyle are what matter most. This recipe is best viewed as a fresh, vegetable-rich dish that can be included as part of that broader approach.
Ingredients
500 g white cabbage
2 carrots
200g packs
2 apples
200 ml yoghurt
salt to taste
spices to taste
3 garlic cloves
1 tablespoon olive oil
Preparation
Finely chop or shred the cabbage. Try to make the pieces relatively thin and even so the cabbage is pleasant to eat and mixes easily with the remaining ingredients. A finely shredded texture also allows the yogurt dressing to coat the cabbage more evenly later.
Grate the carrot finely. The finely grated carrot should spread throughout the cabbage rather than remaining in large pieces. This gives the salad an attractive mixture of colors and distributes the carrot’s natural sweetness throughout every serving.
Add the celery, coarsely grated. Keeping the celery somewhat coarser than the carrot helps preserve a noticeable fresh crunch. Add it directly to the cabbage and carrot so all of the vegetables can be combined together before the dressing is added.
Grate an apple in the same way. The apple adds moisture, freshness, and a mild sweet note that balances the savory ingredients in the dressing. Grating it allows the fruit to blend naturally with the shredded vegetables instead of creating large pieces that dominate individual bites.
Stir the cabbage, carrot, celery, and apple together carefully. Continue only until the ingredients are evenly distributed. At this stage, the mixture should look colorful, fresh, and full of different textures.
