Ingredients:
Cooking spray
1 pound boneless, skinless chicken breasts (four 4-ounce pieces)
1/2 teaspoon salt, divided (or to taste)
1/4 tsp cayenne pepper, split (or according your taste)
1/3 cup all-purpose flour
3 ounces low-fat buttermilk
1/2 cup cornflake crumbs
Instructions:
Preheat your oven to 375 degrees Fahrenheit
Lightly coat a 13x8x2-inch baking dish with cooking spray and set it aside.
Season the chicken breasts with salt and cayenne pepper to taste, and set them aside.
In a medium-sized bowl, mix together the flour, 1/4 teaspoon of salt, and 1/8 teaspoon of cayenne pepper.
Put the cornflake crumbs and buttermilk in two different shallow dishes.
Dredge each chicken breast in the flour mixture, ensuring both sides are evenly coated.
Dip each flour-coated chicken breast into the buttermilk, turning to coat both sides.
Finally, dredge each chicken breast in the cornflake crumbs, again turning to coat both sides.
Transfer the coated chicken breasts to the baking dish that has been ready.
Bake the chicken in the preheated oven for approximately 25 to 30 minutes, or until the chicken is tender and no longer pink in the center.
When baking, there’s no need to turn the chicken over.
