Ingredients:
8 ounces dried apples or dried peaches
1 cup water
1/3 cup sugar
1 tablespoon butter
1 teaspoon cinnamon or apple pie spice
1 can jumbo refrigerated flaky biscuits
Vegetable oil, for frying
Instructions:
In a saucepan, combine the dried apples or dried peaches with water and bring to a boil. Cover, reduce heat, and simmer until tender for about 30 minutes. Take it off the fire and let it to cool a little. Mash the fruit slightly if the pieces are large. Stir in sugar and butter, and set the mixture aside.
In a large sauté pan, heat 2 tablespoons of butter if using fresh apples.
. Add 4 peeled, cored, and chopped apples, sugar, cinnamon (or apple pie spice), and 1 teaspoon of lemon juice. Cook over medium heat for about 15 minutes or until the apples are soft. Remove from heat, mash slightly, and let it cool.
On a surface dusted with a little flour, roll each biscuit into a 5-inch circle.. Place about 1 tablespoon of the apple or peach mixture on half of each biscuit circle. Dip your fingers in water and moisten the edges of the circles to seal the pies. Fold the circles in half, ensuring the edges are even, and press the edges firmly together with a fork dipped in flour to seal.
In a heavy skillet or deep fryer, pour vegetable oil to a depth of 1/2 inch. Heat the oil to 370°F (188°C). Fry the pies in the hot oil over medium-high heat until golden, turning once. Take care not to rush the frying process, as you want the biscuit to be cooked completely through.
Drain the fried pies well on paper towels. This recipe should yield about 10 pies.
Recipe Notes:
Ensure you get a good seal at the edges of the pies and avoid poking holes in them while handling.
Do not fry the pies too fast, as the inside needs to cook thoroughly.
