Puff Pastry Cream Horns

Ingredients:

For the custard cream:

3 egg yolks
3 tablespoons all-purpose flour
1/2 cup sugar
1 teaspoon vanilla extract
8 oz milk

For the cannoncini:

One defrosted sheet of puff pastry (approximately 8 oz)
1/4 cup sugar
1 egg (for egg wash)
Powdered sugar (for decoration)

Instructions:

For the custard cream:

Bring the milk to a simmer, but do not boil it.
Beat the egg yolks, sugar, vanilla extract, and flour in a medium-sized pan until they become light and fluffy.

To prevent lumps, add the hot milk gradually while whisking constantly.
Place the pan over medium heat and stir continuously until the mixture reaches a slow boil. Take care to prevent it from sticking to the bottom.
Lower the heat and cook for a couple more minutes until the custard thickens to the desired consistency.
Fill a glass bowl with the custard, cover with plastic wrap, and allow to cool.. Refrigerate for at least one hour.

For the pastry horns:

Preheat the oven to 400°F (200°C).
On the counter and over the puff pastry, scatter sugar. Roll out the pastry into a rectangle about 9 by 12 inches.
Cut the pastry into 12 strips, each about 1 inch thick. You can do this by cutting the pastry into three parts, and then each part into four strips.
Roll each strip onto a conical horn mold, ensuring that the pastry overlaps about half of the length of the mold.
Place the pastry cones on a baking sheet lined with parchment paper, with the seam side down.
Beat the egg with one tablespoon of water to create an egg wash. Avoiding the mold, lightly coat each pastry cone with the egg wash.
Bake the pastry cones at 400°F (200°C) for about 15-20 minutes or until they turn golden on top.
Allow the pastry cones to cool for a couple of minutes, then gently remove them from the molds. If they stick, you can press the mold slightly to make the circumference smaller and gently turn it inside the pastry until it comes off.
Using a piping bag, fill the pastry cones with the custard cream before serving. You can also sprinkle them with powdered sugar for decoration if desired.
