Oven Roasted Smoked Sausage and Potatoes

Ingredients:

1 pound smoked turkey sausage, cut into rounds
1 large onion, peeled and chopped into chunks
6 baby red potatoes
6 baby golden potatoes
1 tablespoon olive oil
1/2 teaspoon fine sea salt
1/2 teaspoon freshly ground black pepper
1 teaspoon smoked paprika
1 teaspoon Cajun spice

Instructions:

Preheat your oven to 400°F (200°C).
Apply cooking spray after lining a large baking sheet with aluminum foil Set it aside.
Cut the smoked turkey sausage into large chunks.
Chop the onion into large chunks.
Wash and pat dry the baby potatoes. Cut them in half.
Combine the sausage, onions, and baby potatoes in a big bowl.
Drizzle the sausage mixture with olive oil and toss to coat.
In a small bowl, mix together the fine sea salt, black pepper, smoked paprika, and Cajun spice.
Sprinkle the seasoning mixture over the sausage mixture and toss to coat evenly.
Pour the seasoned sausage and potato mixture onto the prepared baking sheet, spreading them out evenly.
Place the baking sheet in the preheated oven and cook for 55 minutes.
Test the potatoes by inserting a fork into them to ensure they are tender and fully cooked. If they’re not done, cook for another 5 minutes.
Take out of the oven once done, and serve.
