Ingredients:
1 box penne pasta, cooked according to package directions
1 pound peeled shrimp, tails removed
3 cups chopped fresh spinach
1 tablespoon minced garlic
2 tablespoons butter
1 cup heavy cream
1 cup shredded mozzarella cheese
3 teaspoons olive oil
Instructions:
Follow the instructions on the package to cook the penne pasta.. Drain and set aside.
In a large sauté pan, heat olive oil and add the spinach and minced garlic. Cook until the spinach is tender.
Add the peeled shrimp to the pan with the spinach and garlic. Toss to combine and cook until the shrimp are pink and cooked through.
Add the cooked penne pasta to the shrimp and spinach mixture. Toss to combine all the ingredients.
In a small saucepan, heat the heavy cream until it comes to a boil.
Add the shredded mozzarella cheese to the cream and stir until all the cheese is melted and combined.
Pour the cheese sauce over the pasta mixture in the sauté pan. Toss everything together to ensure the pasta is coated with the cheese sauce.
Garnish as desired and serve immediately.
