French Onion Chicken Bake

 

Ingredients:

4 tablespoons butter
2 tablespoons balsamic vinegar
2/3 cup low-sodium beef broth
4 onions, peeled and sliced
1 cup shredded mozzarella cheese
4 boneless, skinless chicken breasts
1/2 cup shredded Parmesan cheese
1/2 teaspoon pepper
1/2 teaspoon salt
4 cloves garlic, minced
1 teaspoon thyme

Instructions:

Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit) and grease a baking dish with cooking spray.
Melt the butter in a large pan over medium-high heat on the stove.
Add the sliced onions to the skillet and sauté until they become soft.
Reduce the heat to medium-low and add the minced garlic, pepper, and thyme to the skillet. Sauté until fragrant.
Pour in the balsamic vinegar and beef broth, stirring well to combine. Scrape the bottom of the skillet to incorporate the browned bits.
Allow the mixture to simmer for about 10 minutes, or until the onions caramelize.
Spread 1/3 of the onion mixture evenly in the prepared baking dish.
Place the chicken breasts on top of the onion layer and season with salt to taste.
Spread the remaining onions over the chicken.
Sprinkle a generous amount of Parmesan and mozzarella cheese over the onions.
Bake in the preheated oven for approximately 30 minutes, or until the chicken is cooked through.
Take it out of the oven and leave it to rest at room temperature for a few minutes.
