Ingredients:
1/2 cup peanut butter
3 tablespoons soft butter
1 teaspoon vanilla extract
1 cup Rice Krispies cereal
1/2 cup chopped pecans
1 cup shredded coconut
1 package chocolate chips
1 square sweet chocolate
Instructions:
In a mixing bowl, combine the peanut butter, soft butter, and vanilla extract.
Add the Rice Krispies cereal, chopped pecans, and shredded coconut to the bowl. Mix everything together until well combined.
Refrigerate the mixture for at least half an hour, or longer, to allow it to firm up.
After chilling, shape the mixture into small balls and return them to the refrigerator to chill for at least an hour.
In a double boiler or a heatproof bowl set over a saucepan of simmering water, melt the chocolate chips and sweet chocolate together. Keep the heat low to ensure the chocolate remains soft.
Using a fork, drop each chilled ball into the melted chocolate mixture one at a time. Roll the balls in the chocolate until they are fully coated.
Place the coated balls on parchment paper and let them set in the refrigerator.
Once the chocolate has hardened, the Chocolate Rice Krispie Balls are ready to be enjoyed. They can also be stored in the freezer.
