Ingredients:
2 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup fresh cranberries
Zest of 1 orange
3/4 cup freshly squeezed orange juice
1/4 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
For the Glaze:
1 cup powdered sugar
2-3 tablespoons freshly squeezed orange juice
Instructions:
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius) and grease/flour a 9×5-inch loaf pan.
Mix the flour, sugar, baking soda, baking powder, and salt together in a large basin.
Toss the dry ingredients lightly to coat the fresh cranberries, then add the orange zest and cranberries.
In another bowl, whisk together the orange juice, vegetable oil, egg, and vanilla extract.
Stirring just until mixed, pour the wet ingredients into the dry ingredients. Don’t combine too much.
Evenly spread out the batter in the loaf pan that has been prepared.
Until a toothpick put into the middle comes out clean, bake for about 50 to 60 minutes.
After letting the bread cool in the pan for ten minutes, move it to a wire rack to finish cooling.
In a small bowl, whisk together the powdered sugar and orange juice to create the glaze. Adjust the consistency with more juice or powdered sugar if needed.
Drizzle the glaze over the bread when it has cooled.
Let the glaze set before slicing and serving the Cranberry Orange Bread.
