Apple Dumplings

 

Ingredients:

2 Granny Smith apples
1 lemon
1 cup sugar
1/2 cup (1 stick) butter
1/4 teaspoon vanilla extract
8 canned buttermilk biscuits
4 teaspoons ground cinnamon

Instructions:

Preheat your oven to 375 degrees
Peel, core, and slice the Granny Smith apples vertically into 8 slices each. Place the apple slices in a bowl of water with lemon juice to prevent browning.
In a medium saucepan, combine 1 cup of water, 3/4 cup of sugar, butter, and vanilla extract. Over medium heat, bring the liquid to a boil while stirring to dissolve the sugar. Remove from heat.
Separate each canned buttermilk biscuit into 2 layers.
Take a biscuit layer and wrap it around a slice of apple, slightly stretching the biscuit to overlap and seal at the bottom. Repeat with the remaining apple slices and biscuit layers.
Place the wrapped apple slices, sealed-side down, in a 9×12-inch casserole dish.
Pour the hot sugar mixture over the apple slices in the casserole dish.
In a small bowl, mix the remaining 1/4 cup of sugar with ground cinnamon. Sprinkle this mixture over the tops of the wrapped apples.
Bake the apple dumplings in the preheated oven for about 35 minutes or until they turn golden brown and the apples are tender.
Once done, remove the apple dumplings from the oven and let them cool slightly before serving.
Warm apple dumplings can be served warm with a drizzle of caramel sauce or a scoop of vanilla ice cream, if desired.
