Scalloped Potatoes

Ingredients:

4 cups thinly sliced potatoes
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 teaspoon salt
Dash of cayenne pepper
1 cup grated sharp cheddar cheese
1/2 cup grated cheese (for topping)

Instructions:

In a small saucepan, melt the butter and blend in the flour. Let it sit for a minute.
Add the cold milk to the saucepan, stirring with a whisk. Season with salt and cayenne pepper.
Cook the sauce on low heat until smooth and boiling, stirring occasionally with a whisk.
Reduce the heat and stir in the grated cheddar cheese until melted and well combined.
Preheat the oven to 350°F (175°C).
Transfer half of the sliced potatoes to a one-quart casserole dish that has been gently buttered.
Cover the potatoes with half of the cheese sauce.
Add another layer of potatoes and cheese sauce and repeat.
Sprinkle the remaining grated cheese on top and add a dash of paprika for color.
Bake the scalloped potatoes uncovered for about 1 hour, or until the potatoes are tender and the top is golden brown.
Before serving, take it out of the oven and allow it to cool somewhat.
